Ren, how would you describe what you do?
What I do is my passion. I firmly believe that food should not only taste good but also be made with wholesome, simple ingredients. I’ve always loved eating good bread, but I struggled to find bread with both great flavour and quality. That’s why I started baking my own. After perfecting my recipe over thousands of loaves, I decided to share it with others, and that’s how The Homemade Bread Company was born.
How did you first become interested in making sourdough bread?
It all started during Easter 2011 at my parents' house in Poland. Guests brought various dishes, and one of my sisters brought homemade sourdough bread. The taste was incredible—it was love at first bite. She taught me how to make it, and I was hooked from that moment on.
Can you share a bit about your journey?
The journey has been an interesting one, full of twists and turns. It started with just a couple of loaves delivered locally while pushing a buggy with my baby beside me. Now, that baby is 14 years old, and I supply coffee shops, farmers' shops, and delicatessens across Northamptonshire. There have certainly been challenges along the way, but the therapeutic nature of bread-making has helped me through the tough times. My regular customers give me a sense of purpose and keep me going. There’s also a unique joy in knowing that my bread brings happiness to people’s lives—no other job has given me so many smiling faces!
What makes sourdough bread unique compared to other types of bread?
Sourdough bread is special because it's the healthiest option when made traditionally, without using any raising agents other than natural sourdough. The slow fermentation process breaks down components in the flour that are hard for the digestive system to process, making sourdough easier on the stomach. Plus, its distinct, slightly tangy flavour pairs beautifully with a variety of dishes, making it a versatile addition to any meal.
What are the health benefits of sourdough?
Sourdough is not only easier to digest but can also be tolerated by some people with gluten sensitivities. It's also safe for diabetics, as it causes a slower release of sugar compared to other types of bread, preventing sugar spikes. The best part? It’s made with just four basic ingredients: flour, water, salt, and natural sourdough starter. No unnecessary chemicals, unlike many store-bought breads.
You’re launching courses to teach others about making sourdough bread. What can participants expect from these courses?
Participants can expect a hands-on, straightforward approach to sourdough making. I focus on the no-knead method, which is perfect for people who don’t have hours to spend in the kitchen or the physical strength to knead dough. My method is quick, simple, and accessible to everyone—even those who think they can’t bake!
What inspired you to start teaching others about sourdough bread?
After years of perfecting my bread-making process, I realized it doesn’t need to be complicated. I wanted to show people that anyone can make delicious, homemade sourdough with minimal effort. I’ve designed these courses for busy individuals or beginners who want to try their hand at baking without feeling intimidated. Literally anyone can make this bread!
What is your self-care ritual? Why Elan Skincare?
